Quick n Easy Aloo Matar
Green peas and potato make a great combo, and when they are soaked in a gravy of tomatoes and onion, as in this recipe, they make a yummy side dish for your roti. The best thing about it is that none of my family member seems to grow tired of it, even though I tend to make it repeatedly :)
- 2 medium sized potatoes, cubed.
- 1 cup green peas.
- 2 medium sized tomatoes.
- 1 onion.
- 2 green chillies.
- 1 inch piece ginger.
- Curry leaves.
- Coriander leaves.
- 2 tsps jeera powder.
- 1 tsp chilly powder.
- 1 tsp garam masala.
- Salt to taste.
- 1 tsp oil.
- Cook ( I always steam) the potatoes and peas with a pinch of salt and set aside.
- Make a paste out of tomatoes, onions, ginger and green chillies.
- In a pan, heat the oil, and add curry leaves,garam masala & jeera powder, saute for a while.
- Pour the paste, let it simmer for around 5 minutes, till the gravy thickens a bit.
- Add salt and red chilly powder, mix well.
- Finally add the steamed veggies and let it soak in the gravy for a while.
- Garnish with coriander leaves before serving.
