Vegan Whole Wheat Vanilla Muffins
Found a really really fail proof recipe which satisfies a whole lot of conditions - it is completely vegan, it is whole wheat, it came out really soft and spongy, and tasted heavenly !!! I used coconut milk in this recipe, which was a good find I guess..My kids loved it, and my newly turned vegan husband was very pleased too :) So here is the recipe which made 9 muffins :

- 1 Cup Whole wheat flour
- 1/4 Cup Cornflour
- 1 Cup coconut milk
- 1 Cup powdered sugar
- 2 tsp Baking powder
- 1 tsp Vanilla Essence
- Preheat oven for 10 minutes at 200 degrees C.
- Grease muffin tray or place muffin liners.
- Mix sugar, coconut milk and vanilla essence in a bowl.
- Sift together wheat flour, cornflour and baking powder.
- Pour the coconut milk mixture into the dry ingredients, and mix the batter. Do not over mix, or the muffins will not come out soft.
- Scoop out the batter and fill 2/3rd of the greased muffin tray, leaving room for the muffin to rise.
- Place in the oven and bake for 15-20 minutes, remove when a toothpick inserted inside comes out clean.
- Let the muffins cool on a wire rack.
- Don't wait any more :)
