Penne Pasta with Arrabbiata sauce
Ingredients :
- 1 cup Penne Pasta
- 2 tablespoons olive oil.
- 2 cups tomato puree.
- 2 finely chopped onions.
- 3 or 4 garlic cloves., chopped finely.
- 1 tablespoon italian seasonings ( I used oregano powder).
- 2 tsps red chilly flakes.
- 2 tsps freshly ground pepper.
- 1 tablespoon crushed basil leaves.
- 1 tablespoon parsley.
- cilantro leaves to top.
- 1 sliced bell pepper.
- 1 sliced zuccini.
- olives to sprinkle on top.
- Salt to taste.
- Cook pasta in 3 cups water with some salt and 1 tsp olive oil, for roughly 10 to 15 minutes. Set aside.
- For the sauce, heat olive oil in a pan. add chopped onions and garlic, and saute for 4-5 minutes.
- Add pureed tomatoes, italian seasonings, chilly flakes, ground pepper, salt, basil leaves and simmer on low flame for around 7 minutes. By now the sauce would have thickened, and the aroma will surely fill your house.
- Now for the interesting part of assembling - Take boiled pasta in a plate, ladle some sauce on top of it, and sprinkle olives, parsley and cilantro on top. Sprinkle some grated cheese as well if you wish.
- Serve steaming hot!
